It All Started With A Food Truck
In 2018, our son had a crazy idea to start a food truck. He had worked in several restaurants, learned the best and worst of operations and was ready to go out on his own...with the family’s help. It was a success from day one.
We helped him get started knowing that every member of the family was ready to help when needed. This is what created success for Sombrero Tacoria. Each year after starting up, through 2022 we expanded and opened a new restaurant.
Five years and five units later, in 2023, we decided to start the process to expand through franchising. In June 2023 Sombrero Tacoria ownership opportunities became available!

Chief Executive Officer
Alvaro is our CEO and Founder. Since June of 2018, Alvaro has served as CEO and Founder of Sombrero Tacoria Restaurant located in Totowa, New Jersey. From October 2005 to December 2021, Alvaro was President and Founder at CompuExperts in Wayne, New Jersey.
Jenny Chaljub is our Vice President and Founder. Since June 2018, Jenny has served as VP Operations, Manager and Founder of Sombrero Tacoria Restaurant located in Totowa, New Jersey. From October 2005 to December 2018, Jenny was Administrator and Manager at CompuExperts in Wayne, New Jersey.
Vice President of Operations
Ruben Torres is our Vice President of Operations and Founder. Since June 2018, Ruben has served as VP Operations of Sombrero Tacoria Restaurant located in Totowa, New Jersey. From February 2015 to March 2018, Ruben was Front Desk Supervisor and Front Office Manager at IHG Hotels in Newark, New Jersey.
Vice President of Marketing
Gustavo Torres is our Vice President of Marketing and Founder. Since June 2018, Gustavo has served as VP Operations Manager and Founder of Sombrero Tacoria Restaurant located in Totowa, New Jersey. From May 2016 to July 2018, Gustavo was a mason at CRVP Construction in Wayne, New Jersey.
